Simple Pork Pochero

5 large diced roma tomatoes
1 chopped onion
2 pounds of pork
vegetable stock (enough to immerse)

Let it slow cook.... 4-6 hours... do it before you go to work even.

Then, add
Chinese string beans (or bok choy or both )
sweet potatoes (and/or yams and/or regular potatoes)

Let it slow cook some more... enough to soften the potatoes

Cook rice in your rice cooker right about now... the time to finish the rice (it turns off AND sits in the warmer for about 10 minutes) should be about the time the potatoes to be soft enough.

Season with salt to taste if you need to (we're low salts in this house. You shouldn't need to: the stock, tomatoes, and onions give good flavor)

Put some rice in the bowl and pour the goods over!

Simple right? Of course, Filipino food is meant to have its variations... so have at it if you need to make some adjustments!
